Ingredients

  • 4 Ears x Corn
  • Vegetable Oil
  • Salt
  • 60 grams (2 ounces) x Cotija Cheese (or Feta)
  • 1/2 cup x fresh Cilantro
  • 1 x Jalapeno pepper
  • 2 cloves x Garlic
  • 30 ml (2 tablespoons) x Mayonnaise
  • 1 x Lime
  • Scallions
  • Chile Powder or Chile Flakes

Equipment

  • Skillet
  • Large Bowl
  • Grater or Garlic Press
  • Citrus Press, Citrus Juicer, or Fork

Process

Preparation

  • Corn prepared
    • Shucked
    • Kernels removed
  • Cheese crumbled
  • Scallions sliced
    • Green parts only
  • Cilatro chopped
  • Jalapeno prepared
    • Seeded
    • Stemmed
    • Chopped
  • Garlic minced
    • 2 teaspoons
  • Lime juiced

Cooking

  • Oil Heated in Skillet

    • High heat
  • Corn charred

    • Added to Skillet
    • Salted to taste
    • Tossed & stirred every 2 minutes until charred (10 min)
  • Charred Corn in Large Bowl

  • Cheese, Scallions, Cilantro, Jalapeño, Garlic, Mayonnaise, Lime Juice, and Chile Powder added to Charred Corn & mixed

Serving

  • Serve immediately
  • Adjust taste with Salt & Chili Powder
