- Dried Porcini Mushrooms
- 16 ounces x Cremini Mushrooms
- 1 x Yellow Onion
- 4 cloves x Garlic
- 1 x Red Bell Pepper
- 2 x large Carrots
- Chives
- 2 tablespoons x Tomato Paste
- 1 cup x Red Wine (cabernet, malbec, or merlot)
- 2 tablespoons x Butter (use vegan butter if needed)
- 2 tablespoons x Flour
- Spices
- Salt
- Pepper
- 1 teaspoon x Dried Oregano
- 1 teaspoon x Dried Thyme
- 2 tablespoons x Olive Oil

Preparation#
- Hydrate Porcini Mushrooms in Hot Water
- Slice Cremini Mushrooms
- Chop: Onion, Garlic, Carrot, Bell Pepper, Chives
- Mash in Small Bowl: Flour & Butter
Cooking#
- Sautee in Large Pot: Onion, Carrot, Bell Pepper
- 3 minutes on Medium Heat
- Until Onion is translucent
- Add to Large Pot:
- Sliced Mushrooms
- Red Wine (1 cup)
- Minced Garlic
- Tomato Paste
- Thyme
- Oregano
- Simmer 7-10 minutes
- Until liquid has reduced to half
- Add to Large Pot: Flour & Butter mash
Serving#
- Serve with Mashed Potatoes
- Sprinkle with Chopped Chives
